Vanilla Cupcakes (Vanilla Buttercream & Sprinkles)

Cupcake batter.
Preparation time: 5 minutes. Cooking time: 20 minutes. Yields: 24
3 large eggs
2 cup sugar
1 cup oil
1 cup sour cream
1 tsp vanilla extract
2 1/2 c all purpose flour
1 tsp baking powder
1/2 tsp baking soda
t.t salt
– preheat oven to 350F
– mix large eggs and sugar in stand mixer
– all oil, sour cream and vanilla
– sift dry ingredients, fold into egg/ oil mixture in 3 stages
– portion in paper lined muffin trays
– bake for approximately 20 minutes.
– decorate with vanilla buttercream and topped with sprinkles.
